Cutlery for the professional hotel & catering industry

A cutlery set as we know it today has only existed since the end of the 18th century. Whereas previously only individual pieces of cutlery such as spoons or forks were used as a means to an end, cutlery has gradually become an important part of dining culture. Today, a beautifully laid table in every restaurant also includes high-quality cutlery made from high-quality materials that sits comfortably in the hand and completes the table setting.

In the Banholzer online store, we offer restaurateurs and hoteliers a selection of high-quality cutlery that you can buy to suit your focus and style. We only offer high-quality catering accessories that offer excellent value for money and will last you a long time. When you buy a cutlery set, you receive a replacement guarantee on the individual items. This means you can expand your cutlery at any time and replace missing knives, forks and spoons.

What does a complete cutlery set in the catering industry consist of?

A classic set always consists of a knife, fork and spoon. However, there are also many other accessories that you can choose to suit your gastronomic offering. The choice of suitable cutlery in the catering industry always depends on the design of the menu. If you primarily serve fish, then the focus is on fish forks and fish knives. If you mainly delight your guests with baked goods and desserts, then you will need a cutlery set with cake forks and ice cream spoons. Below you will find a compact overview of catering cutlery and the respective areas of use.

Forks for every dish & every occasion - catering tableware from Banholzer

Not every fork is suitable for every menu and every dish. Depending on which dishes you offer on your menu, pay attention to the details when choosing your cutlery. So that your guests can enjoy the culinary specialties to the full, the fork should always be matched to the respective dish. Forks differ mainly in the number and length of their tines.

This is how the individual fork types differ:

  • Table forks: classic dinner fork with 4 prongs for salads and main courses
  • Steak fork: with long tines and sharp outer edge
  • Fish fork: flat fork for filleting the fish with a hole in the middle for the sauce
  • Cake and dessert fork: small fork with three prongs for cakes or firm creams

In addition to these classic forks, restaurateurs sometimes also need special forks. These include oyster or lobster forks, for example, if you offer them on your menu. Fondue forks are needed if you serve guests a fondue with hot fat or broth at the table. These special forks have a long handle to protect against burns.

Buy spoons in different sizes for the table setting

When browsing through our store, you will find a very large selection of catering spoons that can be used for both main courses and desserts. In our store, you have the option of filtering the individual categories and only displaying the spoons that are missing from your cutlery box.

You can buy these spoons in the Banholzer online store:

  • Tablespoon: Spoon with a capacity of 10 to 15 ml, ideal for soups and stews
  • Dessert spoon: small spoon with compact bowl and short handle, ideal for ice cream and creams
  • Espresso spoon: specially designed for small cups to stir in milk or sugar
  • Coffee spoon: about half the size of a teaspoon with a capacity of approx. 2.5 ml
  • Glacier spoon: spoon with a long handle especially for ice cream in a cup or latte macchiato

You can buy spoons in our online catering store in various shapes and designs to match your tableware.

Various knives for fish, meat, pizzas and starters

There is also a corresponding selection of knives, which are literally tailored to the respective dishes. High-quality knives must be able to cut or fillet well. So that guests can cut a good piece of meat or fresh fish into bite-sized pieces, restaurateurs should pay attention to the choice of suitable knives for the table setting.

We offer these knives for your cutlery insert:

  • Dinner knife/table knife: To match the dinner fork for the main course
  • Fish knife: knife with a blunt edge for filleting the fish
  • Butter knife: narrow, partly curved blade without teeth
  • Steak and pizza knives: knives with a sharp edge and pointed blade
  • Appetizer knife: very small knife ideal for greetings from the kitchen

How is the cutlery set correctly?

The arrangement of cutlery is an art in itself in gastronomy. The trained eye of the guest expects the correct placement of plates, glasses, forks, spoons and knives - coordinated with the menu sequence. When setting the table, we work from the inside out. The cutlery that is used first is placed on the outside edge. Forks are placed to the left of the plate; knives and spoons are placed on the right. Make sure that the cutting edge of the knives is always pointing to the left. If you want to be really precise, arrange the ends of the cutlery in a line about 2 cm from the edge of the table.

If dessert is served, dessert spoons and dessert forks are also used. These are placed above the plate; the dessert fork is placed below the dessert spoon, with the handle on the opposite side to the spoon handle. The bread knife, if required, is placed separately on a bread plate. At the end, there should be a maximum of three pieces of cutlery on the left-hand side and a maximum of four on the right-hand side.

What you should look out for when buying cutlery

High-quality cutlery is an image factor in the hospitality industry and an indispensable element of an upscale dining culture. But what actually characterizes beautiful cutlery and what is actually important when selecting cutlery for the hotel and catering industry? The most important factors to consider when buying cutlery are summarized below.

  1. Durability
The durability of cutlery is achieved through special alloys and manufacturing techniques. It is important, for example, that the cutlery does not deform during eating or suffer any other loss of quality.
  2. Scratch resistance
A resistant surface can prevent unsightly scratches on the cutlery.
  3. Grip
A quality feature of good cutlery is its grip. Forks, knives and spoons should lie comfortably in the hand to make eating as pleasant as possible for the guest.
  4. Weight
The cutlery should not be too heavy. It is therefore important to select suitable materials that do not add unnecessary weight.
  5. Easy to clean
Cutlery that can be easily cleaned in the dishwasher is indispensable in professional catering.

Polished or matt? The right surface for your restaurant cutlery

If you want to buy new cutlery, you can buy forks, knives and spoons with either a polished or matt surface. Both variants have their advantages and disadvantages. First and foremost, it depends on your personal taste as to whether you or your guests like one or the other better. A matt surface is created on a piece of cutlery using a special sandblasting technique. Over time, the matt surface may rub off a little. However, as you only buy quality products from well-known manufacturers in the Banholzer online store, experience has shown that the matt finish remains intact for many years.

Cutlery with a smooth surface also has its charm. To make them stand out as part of the table decoration, they should always be thoroughly polished before setting the table. In any case, a smooth fork and a polished knife embody a timeless elegance and also harmonize with almost any catering tableware.

What are the best materials for catering cutlery?

Cutlery for the catering industry is traditionally made from either steel or stainless steel. Stainless steel cutlery is particularly popular because it is rustproof and can withstand the high temperatures in industrial dishwashers. Even in daily use, good stainless steel cutlery does not lose its quality. In addition, the matt or polished surface looks very high quality. Stainless steel is a tasteless material. A distinction is made between two groups of stainless steel that are used in cutlery production:

  • 18/10 stainless steel (CNS): high-quality chrome-nickel stainless steel, rust-resistant
  • 13/0 knife steel: ideal for monobloc knives and high-quality knife blades

CNS stainless steel is completely rust and acid resistant and looks like new for a very long time with the right care. The smooth surface ensures a high level of food safety, as fewer germs and bacteria can settle on it. Chrome steel, on the other hand, combines these properties with excellent cutting properties, which is why the material is mainly used to make knives.
