The most important accessory for a very special culinary evening is the raclette appliance or raclette oven. In traditional Swiss raclette, boiled potatoes, vegetables or meat are cut into bite-sized pieces and placed in small raclette pans. Once the oven has been switched on, the electric heating plate or heating coil heats up so that the ingredients can cook evenly. Later, cheese slices are placed on the pans. Once these have melted, the first raclette plate is ready to be enjoyed.
The conventional mini raclette oven is equipped with a heating surface and two pans and is therefore suitable for two people at the table. The so-called Tatar hat is not only a real eye-catcher on the guest's table, but also a practical way of cooking different ingredients such as meat and vegetables at the same time during the fondue. This fondue device has a conical shape and is reminiscent of traditional Tartar headdresses. The hat itself is made of heat-resistant sheet steel and there are small hooks or steel spikes on the outside, which are evenly distributed over the surface at intervals of a few centimetres. The chopped pieces of meat and vegetables are hung on these points and turned regularly so that they can cook through from all sides.
The lower edge, which forms the brim of the hat, has a circumferential juice groove. This allows the juices from the meat or vegetables to be collected. The Tartar hat was originally fired with charcoal, which was stacked inside the hat. The advantage of this method was that the heat could be distributed evenly.
