Blender for the professional kitchen

A blender is used wherever coarse ingredients need to be finely chopped and ground. You need a blender to prepare creams, soups and sauces or fine purees. What is a blender and where is it used in the professional kitchen?

The strainer is also known as a strainer mill or strainer sieve and is indispensable in the kitchen for chopping and straining food to give it a uniform and fine consistency. It typically consists of a conical sieve or a drum with fine holes that is placed over a collecting container or bowl.

A blender is used in many places in the professional kitchen:

  • Straining sauces: To obtain fine sauces without lumps or coarse particles, ingredients such as cooked vegetables or fruit are pressed through the strainer.
  • Making purées: Blenders are ideal for preparing fine vegetable, fruit or potato purées that can be used as side dishes or as a base for various dishes.
  • Removing seeds and skin: When preparing jams, jellies or sauces, strainers can be used to remove seeds, skin and other unwanted residues.
  • Making soups and stews: By straining ingredients, you can make bound soups and stews so that there are no pieces of vegetables or meat left.

The blender supports chefs in their kitchen work and performs a variety of tasks. For example, you can also use it to make smoothies and fruit juices. The so-called Flotte Lotte is also often used as a blender for chopping tomatoes to prepare tomato juices or tomato soups.

How does straining work with the straining machine?

The blender is very often operated manually as a tomato blender to make tomato juice or tomato soup. In this case, if you want to chop tomatoes with the blender, first remove the stalks from the tomatoes and cut them in half or quarters with a knife. Then place the pieces in the bowl and turn the crank. The tomato blender then presses or squeezes the ingredients through the holes in the sieve. This removes the skin, small seeds and fibers and produces a fine puree or sauce. Of course, this process also works with all other soft fruit and vegetables. Sometimes it is necessary to press down a little with the spoon so that all the ingredients are caught by the Flotte-Lotte blender.

Which strainer insert is intended for which straining result?

A straining appliance is usually supplied with different sieve inserts. We offer our strainer with 2 mm, 3 mm and 4 mm disks. The specification indicates the size of the holes in the sieve. The smallest disk therefore has holes with a diameter of 2 mm for a very fine straining result. The sauces will be correspondingly coarser if you choose a larger insert.

Why is a strainer called Flotte Lotte?

The term Flotte Lotte has become colloquial for the blender. The history of this kitchen appliance dates back to the 1920s, when the Belgian Victor Simon applied for a patent for an innovative device, which he loosely translated as a kind of "fast-acting sieve for vegetables and other foods".

Three years later, the Frenchman Jean Mantelet filed a patent for a similar device, which he described as a "Presse-purée". This device was driven by a spiral blade with a crank that pressed food through a conical sieve. Mantelet successfully launched his appliance on the market, initially under the name Moulin-Légumes, later as Légumex and finally, from 1957, as Moulinex - the name that his company also adopted. At times, up to two million of these Presse-Purée were produced each year.

In the 1930s, a new version of this strainer came onto the market, which became popularly known as the "Flotte Lotte". Since around 1950, the Flotte Lotte strainer has been manufactured in Germany in various versions by the GEFU company. The Flotte Lotte strainer is a registered trademark of GEFU Küchenboss.
